My Favorite Recipes from Last Week!

Over the last week we have been eating a few old recipes and tried some new ones that I came up with. Not all of them were a hit so I am just focusing in on two that everyone in our home actually ate and actually was told to cook more often.

First Favorite Recipe: Mayo, garlic chicken, with potatoes and steamed broccoli.

Ingredients:

2-3 Large skinless boneless chicken breast

1/4 cup Olive oil Mayonnaise

1 Tbsp garlic flakes

2 tsp Cilantro

Total of 5 tbsp of olive oil

2-3 large potatoes

4 c chopped Broccoli

*about 5 servings

Instructions:

Cube or dice up the chicken breast into bite size pieces. Add chicken to a pot with water until all pieces are covered. Add a pinch or so of salt and pepper and boil for about 15 minutes, then drain. While chicken is boiling, peel potatoes and slice thin. I use my peeler and just rotate around the potato trying to make each slice about the same until it basically is not safe to do anymore. Now get steamer ready by adding 1/4-1/2 inch of water in the bottom. Begin steaming broccoli as the chicken finishes boiling, then grab two pans. One will be for the chicken and another for the potatoes. Add some olive oil into your chicken pan about 1-2 tbsp or just enough to basically coat the chicken making it a nice golden color. In the pan used for potatoes add about 3-5 tbsp of olive oil and begin to heat on low to medium until warm. Add chicken carefully to your pan, then add mayo, garlic, and oregano on medium to high heat while turning all the chicken to coat and crisp up until browned and golden around 10-15 minutes. After all chicken ingredients are combined but is still cooking, add potatoes to your warm oil that is in another pan, be careful as potatoes do have water in them and if you are like me you rinse them several times before cooking. Watch as the edges become golden before the middle gets crispy about 7-10 minutes,  flip and cook about another minute and then place on a plate with a paper towel. Then finally enjoy what you have created.

My second favorite recipe of the week is quiche. Quiche can be made so many ways. For instance I made two different ones for us, one that was healthy and well once for my husband, ha ha.

One the left of the above picture, the quiche ingredients: 

1 pie crust

1/2 c. shredded sharp cheddar cheese(1/4c. for inside and 1/4c for the top)

1 lb of turkey bacon

1/4 c. spinach, chopped

1/4 c. broccoli, pulled apart/ chopped

1/2 c. red onions, diced/ minced

1/4 c. green pepper, chopped

1/4 c. white onion, diced/ chopped

10 eggs

1/4 c. lactose milk

1 tsp garlic seasoning

salt and pepper

1 Tbsp  oregano

*serves 8

Instructions: 

First preheat oven to 350 degrees, then slice your bacon into pieces and cook to your desired crispness, then set to the side to cool. Next place a pie crust into your pie pan or casserole dish as I did above. I used a fork around the outer edge, by placing it the fork against the side of the dish points towards the bottom and pulling up, over and over again. Then I chopped and diced  all ingredients into the dish except eggs, garlic, salt, pepper and milk.

Those ingredient go into a separate bowl, I personally mix it with a fork, like you would for scrambled eggs or an omelette until its all combined and then I added them into the main baking dish. Next use a fork to try and combine all the ingredients nicely while in your baking dish. Top with cheese and oregano then place into the oven and bake for about 30-40 minutes.

The Nutritional facts are from the ingredients I personally used and added into myfitnesspal recipes, it can very, so please keep it in mind.

My husbands quiche ingredients:

2 packages of diced ham

3/4 c. shredded sharp cheddar cheese(about 1/2 c. for inside and 1/4 c. for the top)

1/2 c. red onions, diced/ minced

1/4 c. green pepper, chopped

1/4 c. white onion, diced/ chopped

20 eggs

1/4 -1/2 c. reg milk

2 tsp garlic seasoning

salt and pepper

3 tbsp oregano

*Serves about 16

Instructions * Same as above
